Kaiseki is a multi-course Japanese haute cuisine featuring seasonal ingredients prepared in a variety of cooking methods. Several dishes are served in order and each individual dish is usually small and carefully balanced.

"Traci Post not only made wonderful food but has such an engaging personality. We loved walking around the market with her and hearing about all the wonderful history and colorful stories. The Market is such a vibrant and interesting place and to hear about it from her perspective was a treat! The food and wine during the evening was fantastic. Everything local and fresh. I've taken many cooking classes...but I'd rate this as one of the best! I'll actually make these recipes and Traci's tips were great. She actually got my husband interested in making the recipes!"
